Oven Baked Spaghetti Squash

This is my favorite way to prepare a simple side dish of spaghetti squash. A healthy and delicious veggie that goes well with just about everything!

Ingredients

  • 1 Whole spaghetti squash
  • 2 tbsp Olive Oil extra virgin
  • 1 tbsp Cajun Seasoning I use Tony Chachere's
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 375ºF
  • Cut the stem end tip of the spaghetti squash off crossways.
  • Using a large, sharp, non serrated knife, cut the spaghetti squash in half longways. Depending on how tough it is, you might be able to push the knife all the way through. If it is an extremely firm squash, you may have to carefully work your way around the circumference one side at a time.
  • Remove all the seeds and guts from both halves.
  • Drizzle some olive oil on each side and smear around with a pastry brush. Season generously with cajun seasoning (or whatever you like). Add salt and pepper and mix around with the olive oil. You can add a bit more olive oil and mix around to ensure that all the ingredients mix and stick.
  • Place both halves facedown in a 13x9 pan. I use an unlined glass pan, but you really can use whatever fits.
  • Bake for 30-40 minutes, or until a knife can easily penetrate the squash (similar to testing a baked potato for doneness).
  • When finished, remove from oven. Using a fork, scrape the insides of each half into a large bowl. Be careful, the skin will be HOT for quite some time. The meat should come out with very little effort.
  • After the shells have been completely emptied, mix around the "noodles" to distribute all of the spices since they were all concentrated on the surface. Taste test, and add salt, pepper, or more cajun seasoning if you so desire.
  • Eat and enjoy!

Notes

If you don't have (or like the spice level of) cajun seasoning, garlic and onion powder mixes deliciously with spaghetti squash. I'm a huge fan of loading up on spices in addition to just salt and pepper.
